Parshas Vayechi teaches the ultimate love we need to have for one another. We see Yosef was true in his showing forgiveness and love towards his brothers. It wasn't just while his father was alive, keeping peace and showing kindness to them, in order not hurt his father. After Yakov passes away, and we do not see any change in Yosef's feelings towards them. Yosef continues supporting his brothers and their families and making sure their needs are taken of.
We can take the opportunity to teach our children (and ourselves) that when someone might hurt us, it is from above, and we have to forgive, and truly love the person.
Let's jump right in to our parsha dessert and create these delicious heart shaped ice cream dessert. This week's dessert has a few steps because we have to freeze each layer separately and add on the next layer before we cut the shapes. So just keep in mind that you'll need to prepare this in advance, and not Friday afternoon.
What you will need:
Red/pink sorbet
Vanilla ice cream
Sheet pan
Parchment paper
Strawberry dessert sauce (optional)
Strawberries (fresh or frozen)
Heart Cookie cutter (or a sharp knife to cut the heart shape)
Directions:
Remove the sorbet from the freezer and allow to thaw for about 15 minutes. Don't let the sorbet melt completely or it will loose its consistency.
Line the tray with parchment paper.
Scoop out some sorbet and press it down onto the parchment paper lined tray. Try to spread an even layer, about 1/2 inch thick.
Place in the freezer for at least 3 hours and then continue to the next layer.
Remove the vanilla ice cream from the freezer and allow it to thaw for approximately 15-20 minutes.
Scoop the ice cream and press it down onto the hardened sorbet layer.
Allow the layers to harden for a few hours until firm. Overnight is preferred.
Remove the tray from the freezer. Using your heart shaped cookie cutter, press the cookie cutter into the frozen dessert. Tip #1: Use a glove so your hands don't touch the ice cream too much, Tip #2: Use a small wood cutting board or wood trivet to help press the cookie cutter into the ice cream if it is too hard.
If you do not have a cookie cutter, use a knife to cut triangles. Once you have the triangle shape you can cut down two of the corners, and cut a "V" in the center to create a "pixelated heart".
Place the heart shaped ice creams into a clean tray and freeze until ready to serve. The scraps can be clumped together and pressed in a small container to scoop out in the future.
Plating:
Dice strawberries (fresh or frozen)
Place a blob of strawberry sauce on the plate.
Using the back of a spoon drag the sauce.
Place the heart ice cream on top.
Finish it off with some diced strawberries on top.
